The Pinot Noir vines planted in 1975 in the Badwingert vineyard on the Fläscher Halde slope are weak in growth and, due to their age, produce very low yields. These highly aromatic grapes are fermented in vats, with 20% whole clusters being added. Leaving the grape stems in the vines contributes to the tannins' elegance and freshness, and significantly enhances the wine's aging potential. The Neubruch and Pilger vineyards in Maienfeld provide the power and depth for my Pinot Noir Grand Maître. The wine is aged for 40% in new French oak barrels, with regular lees stirring. During this time, malolactic fermentation takes place. As the wine is unfiltered, sediment may form in the bottle. Two years of bottle aging are strongly recommended, allowing the tannins, acidity, and dark spice to integrate beautifully.
