The late harvest of the Merlot grapes and the long maceration period in the vat result in a very dense, spicy, and vibrant wine full of power. Fermentation takes place with a variety of yeasts and is not chilled for optimal extraction. This process develops the robust tannins, the beautiful ruby-red color, and the dark berry aroma. For Merlot, heavily toasted French barriques are often used. These impart the typical toasty aromas to the wine and ensure good aging potential.
